Jorge returns for his third year with the Knights after redshirting at Grand Canyon University. He also played in Corvallis after his freshmen (2012) and sophomore (2013) seasons at GCU.

He was 3-1, 1.25 in 13 total games for the Knights in 2013, with six saves and 24 strikeouts in 36 innings. He won two playoff games, the second of which was a 1-0, 2-hit shutout of Wenatchee in the final game of the WCL Championship Series. 

Jorge was rated as the WCL's No. 2 pro prospect by Baseball America and Perfect Game in 2013 and was selected in the 30th round of the 2014 draft by the New York Yankees. He also played for the West Division in the 2013 WCL All-Star Game.
 
In nine games with the Knights in 2012, Jorge was 3-3 in nine games, with a 2.79 ERA and 32 strikeouts in 48.1 innings. He was selected to the West Division squad for the WCL All-Star Game and threw a scoreless inning as the West's starting pitcher.

Jorge was 1-6 with a 3.43 ERA in 14 games at GCU as a junior in 2014, with three saves and 38 strikeouts in 63 innings. As a sophomore, he was 8-4 with a 2.86 ER. He was named a Division II West Region "Player to Watch" by Collegiate Baseball magazine before the 2013 college season. He was 3-2, 2.48 at GCU as a freshman in 2012.
